HAZARD ANALYSIS CRITICAL CONTROL POINT or HACCP
HACCP is concerned with the safety management of food products.  The system is designed to identify and control hazards that may occur at every step in the food processing operation.  Critical control points are identified and controls are put in place to  prevent hazards from causing problems. 

These critical control points need to be managed and monitored. HACCP is the key component of many food safety standards.
